Cookie "Spreads" - Pioneer Woman

 

Ingredients

 

  • 1 cup Brown Sugar
  • 1 cup Softened Butter
  • 1 whole Egg
  • 2 cups Flour
  • 1/2 teaspoon Salt
  • 1 teaspoon Vanilla
  • 8 ounces, weight ( To 8 Ounces) Chocolate Chips

Directions

Preheat oven to 350 degrees.

Mix together brown sugar and butter. Add egg and mix together. Add flour, salt, and vanilla, and mix together well.

Spread dough onto cookie sheet to a thickness of 1/4 to 1/2-inch.

Bake for 15 to 20 minutes, or until slightly brown. At this point, pull out of the oven and sprinkle chocolate chips evenly over the top. Return to oven for 1 minute. Remove and spread melted chips over the top. Cut into squares.

Crash Hot Potatoes - Pioneer Woman

 

Ingredients

  • 12 whole New Potatoes (or Other Small Round Potatoes)
  • 3 Tablespoons Olive Oil
  • Kosher Salt To Taste
  • Black Pepper To Taste
  • Rosemary (or Other Herbs Of Choice) To Taste
  • Parmesan, Finely Grated

Preparation

Preheat the oven to 450 degrees.

Bring a pot of salted water to a boil. Add in as many potatoes as you wish to make and cook them until they are fork-tender.

Drizzle a sheet pan with olive oil. Place tender potatoes on the sheet pan, leaving plenty of room between each potato.

With a potato masher, gently press down each potato until it slightly mashes, then push the excess out of the masher back on top of the potatoes. Rotate the potato masher 90 degrees and mash again, pushing out the excess. Drizzle the tops of each crushed potato generously with more olive oil.

Sprinkle potatoes with kosher salt, fresh ground black pepper and fresh chopped rosemary (or chives or thyme or whatever herb you have available.) Add grated Parmesan.

Bake in a 450 degree oven for 20-25 minutes until golden brown and sizzling.

Ingredients

  • 1 stick Butter
  • 1 whole Large Onion, Halved And Sliced
  • 1-1/2 pound Ground Beef
  • Salt And Pepper, to taste
  • 5 dashes Worcestershire Sauce
  • 8 slices Swiss Cheese
  • 8 slices Rye Bread

 

Preparation

In a medium skillet, melt 2 tablespoons of butter over medium-low heat. Throw in the sliced onions and cook slowly for 20 to 25 minutes, stirring occasionally, until the onions are golden brown and soft. 

In a medium bowl, mix together the ground beef, salt & pepper, and Worcestershire. Form into 4 patties.

Melt 2 tablespoons butter in a separate skillet over medium heat. Cook the patties on both sides until totally done in the middle. 

Assemble patty melts this way: Slice of bread, slice of cheese, hamburger patty, 1/4 of the cooked onions, another slice of cheese, and another slice of bread. On a clean griddle or in a skillet, melt 2 tablespoons butter and grill the sandwiches over medium heat until golden brown. Remove the sandwiches and add the remaining 2 tablespoons of butter to the skillet. Turn the sandwiches to the skillet, flipping them to the other side. Cook until golden brown and crisp, and until cheese is melted. 

Slice in half and serve immediately!

Pecan Pie - Pioneer Woman

Pecan Pie - Pioneer Woman

 

Ingredients

  • 1 whole Unbaked Pie Crust (I use "Sylvia's Perfect Pie Crust" Recipe)
  • 1 cup White Sugar
  • 3 Tablespoons Brown Sugar
  • 1/2 teaspoon Salt
  • 1 cup Corn Syrup
  • 3/4 teaspoons Vanilla
  • 1/3 cup Melted Butter (salted)
  • 3 whole Eggs, Beaten
  • 1 cup (heaping) Chopped Pecans

 

Directions

First, whip up your pie crust using "Sylvia's Perfect Pie Crust" found on Tasty Kitchen.

Next, mix sugar, brown sugar, salt, corn syrup, butter, eggs, and vanilla together in a bowl.

Pour chopped pecans in the bottom of the unbaked pie shell.

Pour syrup mixture over the top. Cover top and crust lightly/gently with foil. Bake pie at 350º for 30 minutes. Remove foil, then continue baking for 20 minutes, being careful not to burn the crust or pecans.

NOTE: PIE SHOULD NOT BE OVERLY JIGGLY WHEN YOU REMOVE IT FROM THE OVEN. If it shakes a lot, cover with foil and bake for an additional 20 minute or until set. Required baking time seems to vary widely with this recipe. Sometimes it takes 50 minutes; sometimes it takes 75!

Allow to cool for several hours or overnight. Serve in thin slivers.

Brussel Sprouts - Pioneer Woman

Brussel Sprouts - Pioneer Woman

 

Ingredients

  • 1 large butternut squash
  • 2 1/2 pounds Brussels sprouts
  • 4 red onions, cut into chunks
  • 1/2 cup olive oil
  • 1 tablespoon chili powder
  • Pinch kosher salt
  • Pinch freshly ground black pepper
  • 1/4 cup pomegranate molasses
  • 1 cup pomegranate seeds

 

Directions

  1. Preheat the oven to 375 degrees F.
  2. Use a knife to lop off the top and bottom of the squash. Slice the skin off the sides, then cut the squash in half lengthwise and remove the seeds. Cut the squash into large pieces, cut the pieces into slices, cut the slices into matchsticks and then cut the matchsticks into dice. Divide the squash between 2 baking sheets.
  3. Trim the Brussels sprouts, then cut them in half if desired (or you can leave them whole). Arrange them on the baking sheets with the squash and add the red onions. Drizzle the vegetables with the olive oil, sprinkle with the chili powder, salt and pepper and toss. Roast until browned, 25 to 30 minutes.
  4. Tip the vegetables into a serving dish, drizzle with the pomegranate molasses and sprinkle on the pomegranate seeds. Toss and serve immediately.

Black Bean Burger - Pioneer Woman

Black Bean Burger - Pioneer Woman

 

Ingredients

  • 2 cans (14.5 Each) Seasoned Black Beans
  • 1 cup Seasoned Breadcrumbs
  • 1/4 cup Grated White Onion
  • 1 whole Egg
  • 1/2 teaspoon Chili Powder
  • Salt And Pepper
  • Hot Sauce (I Used Choloula)
  • 8 slices Swiss Cheese
  • Olive Oil, For Frying
  • Butter, For Frying And Grilling
  • 4 whole Kaiser Rolls Or Good Hamburger Buns
  • Mayonnaise
  • Lettuce Or Other Greens
  • Sliced Tomato

 

Directions

Drain, but do not rinse, the black beans. Place them in a bowl and use a fork to mash them. Keep mashing until they're mostly broken up, but still have some whole beans visible. Add the breadcrumbs, onion, egg, chili powder, salt, pepper, and hot sauce. Stir until everything is combined, then let the mixture sit for 5 minutes. 

Heat a tablespoon or two of olive oil with an equal amount of butter in a skillet over medium-low heat. Form the bean mixture into patties slightly larger than the buns you're using (the patties will not shrink when they cook.) Place the patties in the skillet and cook them about 5 minutes on the first side. Flip them to the other side, place 2 slices of cheese onto each patty, and continue cooking them for another 5 minutes, or until the burgers are heated through. (Place a lid on the skillet to help the cheese melt if needed.)

Grill the buns on a griddle with a little butter until golden. Spread the buns with mayonnaise and hot sauce, then place the patties on the buns. Top with lettuce and tomato, then pop on the lids!
